I love fresh fruit especially in the summer!  We are always encouraged to eat a variety of colors – red & blue – Strawberries &  Blueberries are perfect; plus they make what I like to call ‘patriotic treats’ for the 4th of July.  They are delicious all by themselves, try serving them with a spoonful of cool whip or yogurt or on top your favorite cake, pie or frozen treat, you can whip them up in a smoothie, make a berry parfait, or they even go great in a salad!  They taste great and they are good for you too!

Here’s how they stack up based on a one cup serving size:
Strawberries:
  50 calories, 1g of protein, .5g of fat, 11 carbs and 4g of fiber
Blueberries: 
85 calories, 1g of protein, .5g of fat, 21 carbs and 4g of fiber

Keep Fresh Tips:
Keep in the frig until you’re are ready to use
Don’t wash until you’re ready to eat it
Wash under cool water
For best flavor serve at room temperature

This recipe was sent in from my friend Matti.  This is one of his favorites. It is a great alternative to your standard salad. Halloumi Cheese – which I just learned about, is amazingly versatile, you can grill it, sauté it, fry it, grate it or serve it fresh! In Matti’s recipe you sauté it! It’s delicious!

Prep time: 15 minutes
Servings: 4

Salad Ingredients:
1 cup of fresh sliced strawberries
2 small spring onions chopped
1 cucumber cubed
4 cups of mixed salad greens
1 cup Halloumi Cheese
¼ cup sliced black olives

Salad Dressing Ingredients:
1 teaspoon strong mustard
1 teaspoon sugar
1 table spoon orange juice
2 table spoons lemon juice
2 table spoons virgin olive oil
1 teaspoon dried oregano
1/4 teaspoon crunched black pepper

Directions:
Combine strawberries, onions, cucumber and salad greens in a bowl. Set aside. Mix all the salad dressing ingredients together and pour over greens. Refrigerate.

Cut Halloumi Cheese into ½” slices place in a skillet & sauté over medium heat for approximately 2 minutes on each side. Cheese will turn golden brown instead of melting.

Garnish Salad with sautéed cheese slices and olives
